They are carefully processed at our Level 1 (highest rating) HACCP processing facility to ensure peak flavor, texture and freshness. Today, our leadership includes not just traditional Pacific Oysters, but also Kumamoto Oysters, and Triploid "All Season" Oysters. Our subsidiary company, Penn Cove Shellfish L.L.C., offers a variety of in-shell oysters, Manila clams, Mediterranean and Trossulus mussels.
We are proud to operate two state-of-the-art hatcheries and research facilities, including the world's largest. Both produce oyster and clam larvae and seed which ensures us a consistent supply as well as allows us to provide other shellfish growers worldwide with shellfish larvae and seed.
